Culture de la
vigne:
Manual harvesting and hand selection of grappes, reansported in small crates by refrigerated truck to the estate.

Vinification:
De-stemming. Skin contact (5°C) during 2 days. Fermentation during 20 days with temperature increasing progressively to reach 30°C. Pushing down of the cap, reducing progressively as the fermentation advances as well pumping over the must by air.

Ageing:
In small oak casks, 1/3 new, 1/3 in 1 year old and 1/3 in vat.

Bottling:
The bottles are kept upright until the cork have expanded before being laid.
|
Tasting:
Wine limpid with a dense purple colour. The nose is characteristic and distinguished with red fruit odours. The mouth reveals the strength and generosity of a Chateauneuf du Pape with finesse and smooth tannins and notes of kirsch.
